Together with a brewery, a Swiss company has developed a meat alternative from regional raw materials: In an innovative process, brewery spent grains are turned into food. 

By-product of the brewery

The vegan ‘meat’ was a classic upcycling idea: a material or raw material that would normally end up in the bin because it is seemingly worthless is transformed and reused. One of the by-products of the beer brewing process is spent grains made from barley. Brewers' grains are rich in fibre and nutrients and also contain proteins and vitamins. Together with regional peas and wheat, it is used to make meat substitute products.

Upcycling technology makes it possible to utilise a protein-rich residual material as food. It therefore helps to meet the growing demand for plant-based foods while utilising raw materials more efficiently.

Market maturity

The vegan meat substitute products are currently available as burger patties, minced meat and marinated pieces. They can be purchased online and in Swiss supermarkets.
